Kawamura
Miso Ramen
An okay spot if you just want to satisfy a craving, but nothing spectacular. The broth was a bit too salty for my taste. On the positive side, the toppings felt very authentic and unique compared to most places in Spain, giving a genuine Japanese vibe, even if none of them were particularly memorable. The noodles lacked a proper bite and felt slightly overcooked. It gets the job done, but there are stronger options around.

Ajisen Ramen (Pudong International Airport)
Rattan Pepper Ramen
One of the very few bowls of ramen I’ve ever left unfinished. I really didn't like it. This style uses rattan pepper, which gives your tongue a heavy, numbing sensation. Maybe it was too much numbing oil here, and it completely took over the whole dish. If you aren't used to that anesthetic feeling or prefer a traditional broth, definitely skip this one. Just wasn't for me.

Kamukura (Kansai International Airport)
Oishii Ramen
A very savory and comforting bowl before a flight. Kamukura is famous for its unique, clear broth that has a slightly sweet aftertaste from all the stewed napa cabbage they pile on top. It’s light, clean, and packed with vegetable flavor, making it feel much less heavy than a standard tonkotsu. The pork slices were tender and the noodles had a good texture. A really solid and tasty option for airport ramen.

Torisoba Zagin
Tori Chitan
A really good and refined bowl, though I still prefer their signature paitan version. The chitan broth is clear, light, and clean, offering a completely different experience but still packed with a solid soy sauce and chicken flavor. The noodles were cooked perfectly, and it comes with their usual great chashu on top. A very solid 9, even if the creamy paitan remains my favorite here.

The Ramen War
Pistol
Probably my favorite ramen from this second trip to Japan. The broth is clear, light, and transparent, but it still packs an incredibly deep and delicious flavor. It's a soy sauce base done completely right. The pork chashu was super tender, unique, and flavorful, served in thin slices wrapped all around the bowl. The noodles were also perfectly fresh with a great bite. An absolute masterpiece from start to finish.

Kikanbo
Egg Ramen
An absolute bomb of flavor and power. The best part is that you can customize both the regular chili heat and the numbing Sichuan pepper levels separately to fit your taste. The broth is thick, intense, and packed with spices. As for the pork chashu, it's just insane—incredibly tender, fatty, and full of flavor. The nitamago egg was also perfectly gooey inside. A legendary bowl for a reason.

9.5/10🇯🇵 Nagano, Japan
Ramen Misoya
Miso Ramen
A very savory and heavy bowl, perfect for a cold day. This place specializes in local Shinshu miso, which gives the broth a rich, deep, and slightly sweet flavor. They stir-fry the bean sprouts and vegetables in a wok before serving, so the soup has a nice smoky touch that changes the game. The noodles are thick, chewy, and made with local wheat, holding up perfectly against the intense broth. If you are near Nagano Station, this is an absolute must. Another great recommendation from @ramen.dev, thanks!

Taiga Ramen
Kuro Miso Ramen
A really unique and satisfying bowl. The dark miso broth has a deep, rich flavor with a nice touch of sweetness and smokiness that isn't overwhelming at all. The noodles have a great chew and soak up the soup perfectly. They also serve a small vegetable juice before the meal to prep your stomach, which is a cool detail. A solid 9 and a must-try if you are in the area. Thanks @ramen.dev for the recommendation!

Torisoba Zagin
Spicy Chicken Soba
Went back to Torisoba Zagin in this second trip to Japan, to try another bowl. This one hits the spot if you love heat. Their famous creamy tori paitan is super smooth, and the spicy kick is strong but doesn't mask the actual flavor of the soup. It's very spicy but still incredibly tasty. The crispy fried gobo on top gives it a great crunch, and the whole combination just works perfectly. Definitely one of the best spots in Osaka.

Tenkaippin
Max Ramen with Fatty Grilled Chashu
An absolute weapon of a bowl for density lovers. The Kotteri broth takes richness to an extreme level—super thick, viscous, and packed with an incredibly potent savory punch that clings aggressively to every single noodle. It’s heavy, unapologetic, and deeply satisfying. The fatty grilled chashu was the perfect crown, adding a melt-in-your-mouth texture with a beautiful smoky char that cut right through the intense base. A masterclass in maximum flavor.

Ajisen Ramen (Pudong International Airport)
Black Garlic Tonkotsu Ramen
A surprisingly solid and comforting bowl for an airport meal. The black garlic oil (mayu) adds a rich, deep, and aromatic layer to the pork broth that elevates the whole experience. The noodles were cooked well with a decent bite, holding up nicely against the savory soup. While the chashu and toppings felt a bit standard for a major chain, it’s a remarkably satisfying and flavorful option to fuel up before a flight.

Wantanmen
A flavorful bowl with a broth that leans slightly too salty for my taste, though still enjoyable overall. The noodles were perfectly cooked and held up well. Wagyu Ramen
Came back to try more options, and this one was a bit surprising. The wagyu topping was literally served as a burger patty, which felt unusual—interesting, but not something I’d go for again. I found sliced meat much more enjoyable to eat, whether it’s chashu or not. The broth was good, but a lot of the flavor seemed to settle at the bottom, so it needed a proper mix to really bring out its full intensity.

Porco Rosso Ramen
Very similar to the Laputa ramen from the same shop, but with a different set of toppings. Instead of fried leek and scallions, this bowl comes with shiitake and bean sprouts. I actually enjoyed the broth slightly more in this version. I'm quite sure it's the same base broth, but the Laputa includes black garlic which hides some of the subtle nuances, while here the flavors come through more clearly.

A solid and satisfying bowl overall. The chashu was firm but flavorful, which worked nicely with the broth. The noodles were on the thicker side, though I would have preferred them a bit firmer for a better bite. Tamago was well executed, and while nothing here completely steals the show, it’s a correct and enjoyable ramen.

A very well-executed miso ramen with great balance and depth. Nouko Miso
A rich and rounded option. The miso base adds depth and a pleasant umami layer, giving the bowl a balanced yet satisfying intensity. Kyushu Tonkotsu Spicy
A spicy tonkotsu that brings noticeable heat, yet remains very manageable if you enjoy spicy food. The broth has a decent kick without overpowering the bowl, and the noodles hold up well. Chashu was correct, and the tamago stood out slightly more. The space is simple, but the service was excellent and attentive throughout. Spicy Tantanmen
Another visit to Ippudo, this time trying their Spicy Tantanmen. Great news: tamago can now be added! While the egg was well-cooked and tasty, I missed the depth of a proper marinade—but it’s a welcome addition nonetheless. The broth was rich and beautifully balanced, with the right touch of spice and sesame notes that define the style. Compared to the pork-heavy Shiromaru and the garlicky Akamaru, this bowl delivers a different kind of punch—spicy, layered, and highly satisfying.

Another bowl at Ippudo, this time going for the classic. The broth was more pork-forward, standing out without the black garlic oil and umami paste that define the Akamaru. Black Garlic Miso Ramen
A bowl built on a tonkotsu base with the added depth of black garlic miso. Shoyu Tori Paitan
Our very first attempt at making ramen from scratch—broth, chashu, tare, menma, tamago, noodles and aromatic oil—following @donramen_es recipe. The broth turned out to be the biggest surprise, rich and flavorful. The chashu and tamago could have used more hours of marination, and the noodles, while perfectly crafted, ended up slightly overcooked. My tenth ramen in Japan! Full-on intensity with a spicy kick, but the overall flavor didn’t quite land for me. Solid tamago and springy noodles, though the chashu was average. Not many extras on the table either. A decent stop if you're craving heat, but not a standout beyond the spice. I prefer other options in their menu.

Ichiran
Tonkotsu Ramen
My ninth ramen in Japan! The most famous chain ramen—and still solid. Smooth and creamy tonkotsu with excellent noodles and a satisfying broth. Nothing mind-blowing in the toppings, but the solo booth experience and fast, efficient service make it a classic stop in Japan.

Tori Soba Zagin
Chicken Paitan (Tori Soba)
My eighth ramen in Japan! The best Paitan I ever had. A rich and elegant chicken-based ramen with incredible depth of flavor and a punchy broth that surprised me. Both chashu options were fine but not memorable, and the tamago didn’t shine. Still, the noodles were top-tier, and the service was excellent. A refined bowl worth the visit.

Yanagi Sapporo Ramen
Special Miso
My seventh ramen in Japan! I walked in with zero expectations—hadn’t seen a single review beforehand, just stumbled upon it and decided to give it a shot. And yet, it turned out to be probably my favorite miso ramen of the whole trip. Deep, powerful broth, an authentic local vibe, and honest, comforting execution. The chashu and tamago weren’t standouts, but the overall experience was unforgettable. A hidden gem that absolutely delivers.

Ramen Sen-no-Kaze
Yamato no Miso Ramen
My sixth ramen in Japan! While I truly enjoyed this rich and flavorful miso ramen, I can’t in good conscience recommend waiting over three hours like I did. Chashu was absolutely stellar, but the tamago was a letdown and the service and setup didn’t live up to the hype. Not for lack of effort, but it feels like a place overwhelmed by its own popularity. Great bowl—just not worth that wait. Try it if you don't have to wait that much.

Ramen Suehiro
Chashu Soy Shoyu Ramen
My fifth ramen in Japan! I really enjoyed this one, probably the best shoyu ramen I had in my first japan trip. Plus they had a catchy music theme 😁. Powerful and flavorful shoyu that hits hard in the best way. Incredible tamago, menma, and nori. Chashu and noodles didn’t quite impress, and the toppings overall felt a bit basic. Still a worthwhile bowl!

Ramen Yoroiya
Deluxe Shoyu
This one was my fourth ramen in Japan. Classic shoyu punch with a deep, satisfying flavor. Nori was a highlight, but the chashu and tamago were just okay. Noodles could’ve had more bite. Cozy spot with friendly service!

Ichikakuya Ramen
Special Ichikakuya bowl
My third ramen in Japan! Bold and tasty broth with top-tier chashu. Tamago was underwhelming, and no menma or kikurage this time. Spinach felt out of place. Still, solid noodles and a well-run spot!

Oreyushio Ramen
Special Tonkotsu
My second ramen in Japan! Delicious chashu and solid broth. No nori this time, and the menma fell short. Great service, though the spot itself could use some love.

Ippudo Ramen
Kiwami Akamaru
This was my first ramen in my recent trip to Japan. It was a rich broth, creamy and really tasty. Bold flavor, amazing chashu and nori. Tamago could be better, but overall a solid bowl worth the ride.
